T-BONE STEAK IN THE OVEN IS THE BEST!

What is THE best way to cook a steak? How about using the stovetop AND oven!

This method is foolproof! (It's also quite nice when the weather won't cooperate for outdoor grilling)


Season your steak with salt and pepper on both sides

Place steak in a smoking hot pan (cast iron) with olive oil


Now, sear the steak on one side for 3 minutes


Flip the steak and sear for 2 minutes


Flip steak again and sear for 2 more minutes


Place steak in 450 preheated oven for 8 minutes


Remove steak from oven, place on plate, and cover with foil


Let steak rest for 10 minutes and ENJOY!

Crockpot Salisbury Steak

2 pounds lean ground chuck or sirloin

1/2  (1 ounce) envelope dry onion soup mix (2 TBSP)

1/2 cup Italian seasoned bread crumbs or crushed saltines

1/4 cup milk

2 tablespoons vegetable oil


1/2 to 3/4 onion chopped and then sauteed

1/4 cup all-purpose flour
 
1 (10.75 ounce) can condensed Cream of Mushroom soup

1 can Golden Mushroom soup

3/4 cup beef or chicken broth (I use chicken)


In a large bowl, mix together: ground chuck, onion soup mix, bread crumbs (or saltines) and milk

Shape into patties ...depending on size, you should get approx 6-8 patties

Heat oil in a large skillet over medium-high heat. Saute onions and set aside

Coat the patties in flour and brown them on both sides (in same pan you sauteed the onions in)


Place browned patties into crock pot

Pour onions over patties

In a medium bowl, mix soups and broth

Pour the mixture over the patties/onions in the crock pot

Cook on the Low  for 4 or 5 hours until patties are done.


Tip: The gravy is perfect with a side of mashed potatoes

Tip: Or cornbread stuffing :)

Tip: I add a touch of garlic powder to the mix. But hey, that's just me

The Best Meatball Recipe Ever...

1 lb hamburger
2 eggs, beaten with 1/4 cup milk
3/4 cup grated Romano (don't be shy with the Romano, add 1 cup if you want)
1 cup crushed saltine crackers (the secret ingredient)
1 small onion, minced
2-3 cloves garlic (or garlic powder to taste)
1/2 teaspoon parsley
1 teaspoon salt
freshly ground pepper to taste


Mix all ingredients by hand
Form into golf ball sized meatballs
Bake at 350 degrees for 30 minutes

Mmm. Mmm, Squisito :)

Tip: Double or triple the recipe, bake as directed, and freeze some for a lazy no cook day :)

Steak Dinner In The Crock Pot...

Place 3/4 inch thick steak of your choice in crock pot

Sprinkle with pepper and your favor sauce or seasonings

Now, cover the steak with foil...

Place potatoes wrapped in foil on top of the steak

Now foil wrap some frozen corn on the cob and place it over the potatoes...

Cook on low for approx 6 hours.

Dinner is served :)

Tip: Not in the mood for steak? Substitute steak with pork (or chicken) and your fav barbeque sauce!

Tip: Before you foil up the potatoes -cut them in half and add a slice of onion, a dab of butter, and a pinch of salt and pepper. Oh my, my, my :)

TatorTot Casserole...

2 lbs. extra lean ground beef
1 can cream of mushroom soup
1 16oz Sour Cream
1 cup grated cheddar cheese (or more...)
1 pack frozen tatter tots


Preheat Oven: 350 degrees...

Grease 13x9 inch pan. Layer the beef on the bottom of the pan, set aside...
(if beef is not extra lean, fry it up and drain it first)

In a med mixing bowl add sour cream and mushroom soup and mix well...

Layer the mixture on top of the beef, then add cheese...

Top with tatter tots. Bake covered for 45 minutes...

Uncover and bake 15 minutes longer, adding extra cheese if desired

To Die For Crock Pot Beef Roast...

1 (3-4 lb) boneless chuck roast or sirloin tip
1 (1 ¼ ounce) package brown gravy mix; dry
1/2 of (1 ¼ ounce) package Good Seasons Cheese Garlic dressing mix (when ANY recipe requires a dry Italian dressing mix, I only use Good Seasons Cheese Garlic. It's a fav around here)
1 (1 ¼ ounce) package ranch dressing mix; dry
3/4 cup water


Place beef roast in crock pot.
Poke a few small holes (or a few small slits) on top of roast
Combine dry mixes in a bowl and use as a rub ON the roast an IN the poked holes (or slits)
Pour the water around the roast.
Cook on low for 7-9 hours.

Tip: For an all-in-one meal, add chunks of potatoes, carrots, celery and onions to the crock pot
Tip: Save remaining 1/2 dry packet of Good Seasons for the next time you make this roast :)
Tip: If you do add veggies in the crock pot, feel free to add more water

Hamburg Gravy Over Mashed Potatoes...

For some reason, men LOVE this recipe. They really do :)
 
1 1/2 lbs. ground chuck
1 medium onion, chopped
2-3 tbsp flour
1 cup water
pepper to taste

Fry ground chuck with onion; DO NOT DRAIN GREASE
When ground chuck is browned, sprinkle enough flour in to absorb grease
Then add approx. 1 cup water in fry pan.. enough to cover the meat and onions
Add 3-4 beef bullion cubes to mixture
Simmer until gravy thickens
Serve over mashed potatoes, rice, or noodles

Tip: Don't use ground beef in this recipe. Ground beef will result in too much grease and you'll end up having to drain it away. Also, don't use ground sirloin because you'll lack that little bit of grease required for the gravy.
Tip: If you have gravy lovers, be more generous when sprinkling the flour and just add more water and bullion

Roast Beef Sliders...

I have a cousin who cooks like it's her job. She's like my E.F. Hutton. When she cooks, I listen. This recipe is over the top good. Try it!

1 stick butter (1/2 cup)
1 pack onion soup
1 lb deli roast beef
1 lb sliced Swiss cheese
6 large rolls, or 8-10 small rolls


Mix softened butter with 1 package dry onion soup
Spread/baste butter and onion mix lightly on the top part of your rolls
Place slices of roast beef on bottom part of each roll - (thick or thin, whichever way you like your sliders)
Top with Swiss cheese
Cover each roll with the top you basted. Now, your roll is complete :)
Wrap each roll individually with aluminum foil
Place wrapped sliders on cookie sheet
Bake 20 minutes @ 350

Tip: Having a party? Double or triple the recipe, make a bunch ahead, wrap each roll in foil, refrigerate and bake when needed
Tip: Horsey sauce, horseradish sauce, ketchup ...Mmmm
Tip: Sometimes a deli will offer Au Jus if you order enough roast beef. If so, heat it up, and dunk away. Hello French Dip :)
$$: Deli roast beef is pricey. If you'll be making a lot of sliders, trying cooking a roast in the crockpot to save on cost. After roast is done cooking, llightly shred the meat and then follow the steps above

Crockpot Corned Beef And Cabbage...

Ah, the Irish....

As usual, I prepare the meat and chop all the veggies the night before. (I can't help it, I love the morning crock pot dump and stir thing) ..

4 lbs Corned Beef Brisket
1/2 tsp pepper
3 garlic cloves, minced
2 yellow onions, peeled and cut into wedges
1 head cabbage, cut in large wedges
6 medium white potatoes peeled and halved
1-2 lbs carrots, peeled and cut into chunks

1 cup brown sugar
1 can beer
2 cups water


Trim excess fat from corned beef
Rinse brisket in cold water to remove excess salt. Pat dry
Sprinkle Corned Beef with pepper and brown all sides over high heat in skillet
Place cabbage, potatoes, carrots, garlic, and onions in crock pot
Rub brown sugar over entire brisket (top, bottom and sides)
Pour beer and enough water to almost cover
Set crock pot on high for 8 hours.

SERVE:
Sour Cream & Mustard Sauce:
1/2 cup sour cream
2 tablespoons Dijon mustard
1/4 teaspoon sugar

or....
Horseradish dressing: 
1/2 cup mayo,
1/2 cup sour cream
horseradish to taste

Tip: Not crazy about beer? Try apple juice instead
Tip: Slice Corned Beef against the grain or pull it apart with forks

Easy Meatloaf...

1 1/2 lbs.ground beef, ground chuck, or turkey
1   6 oz package Stove Top stuffing (chicken)
1/2 cup water
2 eggs, beaten
1 onion, chopped
Sprinkle salt, pepper, grating cheese (Romano or Parmesan) and parsley to taste
1/3 cup ketchup or barbecue sauce

Mix all ingredients (except ketchup or barbecue sauce) in large bowl
Pat into 8x8 inch square pan
Spread ketchup or barbecue sauce over meat mixture
Bake at 350 for one hour

Tip: Leftover meatloaf? Don't rule out cold meatloaf sandwiches. They're great!

Sloppy Joe's...

There are plenty of Sloppy Joe recipes out there, but this particular dish came from a NY State High School cafeteria. Back in the day, everyone got "doubles" on Sloppy Joe Tuesday! True story :)

1 lb. hamburg (ground beef, ground chuck or ground round)
3/4 c ketchup
1/4 c tomato sauce
1/4 c vinegar

1/4 c water
3 TBSP sugar
3 TBSP chopped celery
1/2 tsp dry mustard
1 onion chopped
1/2 tsp Worcestershire or steak sauce


Brown hamburg, celery, and onion in large skillet over medium heat. When celery and onions are tender, drain excess grease and return mixture to skillet.

Add remaining ingredients to skillet and simmer for approx 20 to 30 minutes.

Slow Cooker Beef Stroganoff

Here's a mouthwatering recipe that's super, super easy to make. I usually brown the meat, onions and garlic the night before -since I'm all about the dump and stir factor in the morning :)

1 pound cubed beef stew meat
2 (10.75 ounce) can condensed golden mushroom soup (must use Golden Mushroom or the end result is just not the same... )
3/4 cup chopped onion
1 tablespoon Worcestershire sauce
1/2 cup beef broth (I add more because my family loves gravy)
½ package french onion soup mix (I often use the whole package ...it just depends)
Salt, pepper, garlic to taste

8 oz mushrooms
Tab of butter

4 ounces cream cheese
dollop of sour cream


In a slow cooker, combine the meat, soup, onion, french onion soup mix, Worcestershire sauce, beef broth, and water.

During cooking time, saute the mushrooms in butter about 4 minutes.

Put sauteed mushrooms in slow cooker last 30 minutes of cooking time.

Cook on HIGH setting for approx 6 hours. 

Stir in cream cheese and sour cream 30 minutes before serving.

Tip:   Best served over buttered egg noodles.

Taco Pie...

I just had Taco Pie for the first time a few weeks ago. My sister-in-law got the recipe from our niece, and I'm sure glad she did. If you're craving a good Mexican recipe, make some Taco Pie. It's great.

1 (8 oz.) package refrigerated crescent rolls
1 lb. ground beef
1 (1 oz.) package taco seasoning mix
1 (16 oz.) container sour cream
8 ounces shredded Mexican-style cheese blend
1 (14.5 oz.) package crushed tortilla chips


1. Preheat oven - 350 degrees.

2. Lay crescent dough flat on the bottom of a square cake pan and bake according to package
 directions.

3. Brown the ground beef, add taco seasoning and stir together.

4. When dough is done, remove from oven and place meat mixture on top. Layer with sour cream,     cheese, salsa (optional), and use the crushed nacho chips for the topping.

5. Return to oven and bake at 350 degrees for 10 minutes, or until cheese has melted.
