Chicken Or Shrimp Fried Rice...

(ADD CHOPPED CHICKEN OR CHOPPED SHRIMP FOR COMPLETE MEAL)

3 cups cooked white rice
3 tbs sesame oil
1 cup frozen peas and carrots (thawed)
1 small onion, chopped
1tsp minced garlic
2 eggs, slightly beaten
1/4 cup soy sauce


On medium high heat, heat the oil in a large skillet or wok

Add the peas carrots mix, onion and garlic. Stir fry until tender

Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled

Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated


Tip: Try adding green onion to the stir fry

Tuna And Pasta Salad...

5 cups of cooked pasta (I use cartwheels)
1 can Albacore tuna
1 cup of shredded cheese (I use sharp cheddar)
3 chopped green onions (or one medium onion chopped or diced -approx 3/4 - 1 cup)
1 teaspoon mustard
1 cup of mayo
3/4 cup of sour cream
salt and pepper to taste


Cook the pasta; rinse
Mix all ingredients together and serve cold.

Tip: Cook, cool and add frozen peas
Tip: Like carrots? Dice approx 1/2 cup raw carrots and add them, too!
Tip:  Black olives? Sure, go for it :)

Salmon and Maple Syrup...

1/4 cup PURE maple syrup or honey
1/4 cup soy sauce
2 cloves minced garlic
12 ounces fresh salmon


Combine maple syrup (or honey), soy sauce and minced garlic in a large zip-lock bag. Add the salmon
Refrigerate for an hour, turn after 30 minutes
Pour salmon and marinade in baking dish; cover with foil
Bake in a 350 degree oven, for 15 minutes
The salmon is done when it flakes easily

Tip: Wonderful on the grill, too!

Crockpot New England Clam Chowder...

 3 10-3/4 oz cans cream of potato soup
1/2 cup butter or margarine, cubed
2 10-3/4 oz cans New England Clam Chowder
1 pt. half and half
2 6-1/2 oz cans chopped clams
1/3 cup chicken broth

Combine potato soup, butter, clam chowder and half & half in crock pot; mix well
Drain clam juice into crockpot and place reserved clams in fridge
Cover and cook on low for 2-4 hours
Add chopped clams to crockpot about 30 minutes before the chowder is done. That's it!

Tip: Garnish each bowl with parsley before serving

Creamy Shrimp Crab Dip...

1 package (8 oz.) pepperjack cheese, shredded
6 ounces lump crab meat, drained
1 lb. cooked shrimp, peeled and chopped
1 cup heavy whipping cream, divided
1 round sourdough bread loaf 

A 4 quart crock pot and a 1 lb loaf of bread are perfect for this recipe

Place cheese in crock pot and turn to high
Add crab, shrimp and 3/4 cup heavy whipping cream
Cover and cook 10 - 15 minutes or until cheese is melted

Cut off top of bread and hollow it out to create a bowl
Cut extra bread into large bite size pieces
Place bread bowl on serving platter and surround it with the "large bite size pieces"

If you want (or need) the dip creamier, stir in up to 1/4 cup of the remaining heavy cream
Ladle the dip into your bread bowl and serve!

Clams Casino Appetizer...

Clams Casino are always a big hit. You can bake the mixture on clam shells and serve, or bake the mix in a baking dish and serve with your favorite crackers. Divine.

3 cans chopped or minced clams; reserve liquid from one can
1/2 stick melted butter
1/2 lb bacon; fried, drained and crumbled
1 green pepper chopped fine
1 onion chopped fine
1 tube Ritz or Townhouse crackers, crushed

Place clams and liquid in 8" baking dish.

Combine bacon, green pepper, onion, butter, and crackers.
Mix well and spread over clams.

Bake in pre-heated oven @350 for approx 25 - 30 minutes.

The Easiest, Tastiest Coleslaw Recipe Ever...

Truth be told: I hate coleslaw, unless it's KFC's... because the colonel's coleslaw is the best. However, this coleslaw recipe is quite simple to make and just as good. Sorry Colonel, but it's true...

1 bag slaw 
1 cup mayo
2 TBSP vinegar
1/3 cup granulated sugar

Mix and make one day before you serve.

Tip 1:
 If you like coleslaw with a bite, add a touch of horseradish.

Tip 2:
Prepare your favorite fish or fish sticks etc...
Place on a roll
Spoon slaw on top.

Best. Fish Sandwich. Ever.

White Clam Sauce I...

If you like clams, then you probably love clam sauce, too. It's not hard to make, especially using this recipe my cousin was kind enough to share. Try it. It's heavenly.

3 cans chopped or minced clams
1 onion chopped small
2 cloves garlic minced
1/4 tsp. red pepper flakes or to taste
1 tsp. basil
1/2 tsp. Italian seasoning
1 good handful parsley
3/4 C any white wine

Saute onions and garlic in some oil. Pour in the juice of the clams, all of the seasonings and wine. Cook until onions are cooked thoroughly. Add clams just before serving, just to heat through. 8 - 10 shrimp ( optional ). Serve over angel hair, linguine or your favorite pasta.

Homemade Tartar Sauce...

There are two things I can think of that really annoy me about Tarter Sauce. The first is not having it in the house when you need it, and the second is paying a fortune for those little bottles of Tarter Sauce the grocery stores carry. What a rip! Man, I feel better having just said that :)

Anyway, here's a solution, and a very good one if I do say so myself:

1    cup Mayonnaise
1   Tbsp Sweet Pickle Relish (if you'd rather use Dill Relish, go ahead)
1    Tbsp dried (or minced) onion
2    Tablespoon lime or lemon juice (which ever one you like better)


You can use this immediately after making it, but it is better if you refrigerate it for an hour or so.

Linguine And Clam Sauce II...

Are you a Linguine and clam sauce lover?  Well, if so, don't be fooled by the simplicity of this recipe ...it's delicious. Give it a try.

1        cup   olive oil
3        garlic cloves, chopped
2        (6 oz) cans clams (we use cans of chopped clams)
1        cup fresh parsley, chopped
12      fresh clams (optional)

1lb.    linguine (cooked)
Linguine pasta
Romano cheese

salt and pepper to taste

Minutes before Linguine is done cooking:
In saucepan heat Olive Oil
Combine garlic, parsley, and chopped clams.
If you use fresh clams place them on top so they open.
Cook over medium heat for approx 5 minutes.
Serve over Linguine and top it off with the Romano cheese.
