Roadhouse Cinnamon Butter...

I could drink this stuff. Thanks Roadhouse. Yum-yum.

1 room temp stick of butter
1/4 cup powdered sugar
1/4 cup natural honey
1 TBSP  ground cinnamon

Mix all ingredients in a bowl, then place in glass jar with lid.

This is super good on toast, crackers, apples, you name it.

Tip: As you know by now, we like intense. Be brave. Add more cinnamon.

Lazy Eggs...

So, so easy and good...

Spray each muffin well with nonstick spray.

Place a slice of ham in the bottom of each muffin well

Place about a teaspoon or so of diced tomatoes on top of the ham

Sprinkle some shredded cheddar cheese over the tomatoes

Break one egg into each spot

Sprinkle with salt and pepper to taste

Bake at 350 degrees for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through

Tip: Substitute diced tomatoes with Mexican style tomatoes, or salsa!

Pancake Muffins...

This isn't so much a recipe as it is an idea, because all it really calls for is your favorite pancake mix, milk and Pam spray. Young and old love this. Plus, its easy, with way less mess!

Ingredients:
Pancake mix and milk (prepare according to directions -however much you need)
Spray Pam

Spray muffin pan(s) with Pam (I used non stick mini-muffin pans - 12 count)
Mix pancake batter as directed
Pour batter about 3/4 of the way up per muffin

Bake in oven about 12-14 minutes at 350. Serve with Maple Syrup

Tip: Before serving, dust with cinnamon and confectioner's sugar
Tip: Bake several in advance if you're serving a brunch. Microwave a bit before serving :)
Tip: Top with bacon, sausage or fruit before baking!

Strawberry Stuffed Croissant French Toast...

Strawberry French Toast Croissants are heavenly. Just heavenly.

6-8 plain croissants
3 eggs
1 cup milk

1/2 cup half-and-half (optional)
1 teaspoon vanilla extract
1/8 teaspoon cinnamon
8 oz Cream cheese, softened
Butter
Strawberry, peaches or other fresh fruit, sliced
1/4 cup powdered sugar (optional)


Whisk eggs in a deep bowl until light yellow.
Add milk, half & half, vanilla and seasonings and mix together.
Slice croissant and spread cream cheese on bottom half.
Lay sliced fruit on top of cream cheese and cover with top croissant half. Press lightly to secure
Dip in egg mixture; fry in butter (about 1-2 minutes per side) until golden brown. Careful not to let them burn
Sift powdered sugar or remaining fresh fruit over croissants and serve with maple syrup!

Breakfast Casserole...

This Breakfast Casserole recipe will serve approx. twelve people. It's great for Holiday mornings with the family, etc...

1 lb. sliced bacon, diced
1 medium sweet onion, chopped
6 eggs, beaten
4 cups frozen, shredded hash brown potatoes
2 cups shredded cheddar cheese
1 1/2 cups small curd cottage cheese
1 1/4 cups shredded Swiss cheese

Cook bacon and onion in large skillet until bacon is crisp; drain
Combine remaining ingredients in bowl; stir in bacon mixture
Pour everything in a greased 13x9" baking

Bake uncovered at 350 for 35 - 40 minutes or until bubbly
Let stand 10 minutes before cutting
