The hardest part of this recipe is chopping up the veggies. Delicious. Delicious. Delicious.
1 head of cabbage, chopped
2 lbs. potato, peeled and halved
2 lbs. carrots, sliced like coins
2 lbs. cooked kielbasa, cut in angled chunks
1 large yellow onion, sliced and quartered
1/2 tsp. dried basil, crushed
1/2 tsp. dried thyme, crushed (optional)
1/2 tsp. ground black pepper
32 oz. chicken broth
1/4 cup vinegar (optional)
Combine cabbage, potato, onion, and carrots. Top with kielbasa. Sprinkle basil, thyme, and pepper over kielbasa. Pour chicken broth (and vinegar if desired) over all ingredients.
Cover and cook on Low-heat setting for 7 to 9 hours, or High-heat setting for 3-1/2 to 4-1/2 hours.
Tip: Before you take the first spoonful, pour a touch of vinegar in your bowl. Yum. Yum. :)
Tip: If you're not crazy about kielbasa, substitute with ham!
