1-2 tablespoons vegetable oil
4 thick cut pork chops
garlic powder and pepper to taste
1 box - your favorite prepared stuffing (I use Cornbread)
1 can cream of mushroom soup
1/3 cup water (or milk)

Preheat oven to 325 degrees F (175 degrees C)

Prepare stuffing according to directions.  Let cool a bit

Slice a pocket into each chop and sprinkle chops with garlic powder and black pepper

Heat oil in a skillet and brown the chops on both sides over medium heat.

Place chops in a baking dish

When the chops are cool enough to handle, generously spoon stuffing mix into each one

Combine the cream of mushroom soup with the water or milk, and pour over stuffing and pork chops

Cover and bake for  approx 2 hours

Then, uncover and continue baking for 10 minutes

Tip: Don't be shy with garlic powder. It goes so well with the pork :)
Tip: Serve with mashed potatoes - the mushroom soup is going to make a wonderful gravy!
