Slow Cooker Enchiladas...

Taste Of Home recipes never, never let me down :)

1 pound either ground chicken, turkey or beef
1 cup chopped onion
1/2 cup chopped green pepper
1 -16 oz can pinto or kidney beans, drained
1 -15 oz an black beans, rinsed and drained
1 -10 oz can diced tomatoes and green chili's, un-drained
1/3 cup water
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp salt
1/4 tsp black pepper
1 cup (4 oz) shredded sharp cheddar cheese
1 cup (4 oz) shredded Monterey Jack cheese
6 flour tortillas


In a large skillet, cook the meat, onions, and green pepper until meat is no longer pink.

Add the next 8 ingredients and bring everything to a boil. Reduce heat and simmer for 10 minutes

Combine cheeses...

Layer about 3/4 cup of the meat mixture into bottom of crock pot. Layer tortilla(s) to cover. Then top with cheese. Repeat layers...

Cover and cook on low for 5-7 hours, or until everything is heated through


Tip: Top with your favorite salsa (chilled) and/or sour cream. Mmmmm
