6 large bell peppers
1.5 lbs raw ground chuck
2 cups cooked wild rice (white or brown works, too)
2 cups chicken or vegetable stock
1 (15oz) can of diced tomatoes
1 medium onion chopped
3 cloves garlic, minced
2 cups shredded cheddar cheese or your favorite cheese blend
1 egg
Salt and Pepper to taste
Cut the tops off each pepper -remove inside seeds etc
In a large mixing bowl, combine ground beef, cooked rice, ½ of the can of chopped tomatoes, onion, garlic, cheese, egg, salt and pepper
Mix well until evenly combined
Fill peppers with above mixture
Pour stock over and around peppers
Pour the rest of the canned tomatoes in
Cover and cook on HIGH for 5-6 hours or LOW for 8 hours
