This recipe is so good!
2 tablespoons oil
2 tablespoons chopped onion
1 1/2 cups uncooked white rice
2 cups chicken broth (I usually add a touch more broth so the rice fully cooks before the broth absorbs)
1 cup chunky salsa
Garlic powder and black pepper to taste (optional)
Heat oil in a large, skillet over medium heat
Stir in onion; cook until tender, about 5 minutes
Mix rice into skillet and stir often
When rice begins to brown, stir in chicken broth and salsa.
Reduce heat, cover and simmer approx 20 minutes -until liquid has been absorbed. No peeking!
Tip: Add sauteed chicken strips (you may have to add more broth if including the chicken)
Tip: Fry a little hamburg; drain it, and add it to the mixture (you may have to add more broth if including the hamburg)
Tip: Add chili powder, or cumin. If you want real heat, add a little Cayenne!
